I have created a brand new board and before customising, thought I would test the email to create a task - but it's not working.
I have sent an email to jira@otmarketing.atlassian.net the address shown in Settings > System > Incoming Mail > Default Cloud Mail Server And no task is created
Any ideas?

It's not clear from your description, but if you haven't already configured a Mail Handler, you will need to do so.
By default, the Mail Handler section looks like this:
