I created 3 custom fields for testing:
custom-listsingle
custom-listmultiple
custom-singletext
When going to my test project and clicking "list" view on the left, I can't add the list custom fields to the columns, but I can add custom-singletext.
Is there a reason why list fields can't be on the project list view? I can do this functionality if I click "issues" and add the custom fields or create a filter.

Hi Jonathan,
Not all custom field types are available yet for the List view in JWM projects. The Atlassian development team has that on their roadmap to finish out, but I am not aware of the timeline for it.

As John wrote, the JWM team are still adding further custom field support.
If you're after a list/table/spreadsheet view that supports all your standard fields and custom field types, I suggest you check out JXL. This is how it will look like:
And here's a quick overview and comparison of currently supported fields by JWM, JXL, etc. that I wrote recently. Hope this helps.
Additionally, JXL offers all sorts of great features btw, such as copy/pasting fields, multiple JQL-based sheets per project, export, support for all Jira products/project types...
