Automate Sprint Closure to Bitbucket Branch Tagging

Hello:

At the end of an Atlassian sprint... it is proposed to tag the latest commit of a bitbucket branch with "stable" (well really move it from the last time it was used to the latest)

rather than depending on a manual process....

we do press a button in Jira to close the sprint - ... so is it feasible to hook that ? have you heard this approach or have any examples?

for my knowledge you can't that using builtin feature. You should develop something custom. For each sprint you could work on different projects/repos on bitbucket side so you should be able to tag something in multiple repos.
