Does anyone know how to add a new field in projects created as company-managed?
I need to create a field called "3rd assignee"

You will need your system admin to create a single user picker custom field. Once it's created it, you can add it to your screen or the system admin can do it for you. Make sure it applies to the create/edit/view screens if you have different screens applied to your screen scheme.

I'm Admin in Jira; as I said, I need to create a new field but I don't know where it is created so that this new field can appear on the board when I assign the same task to a third person.
I would love to know a step by step to create a new field.
