The goal is:
automatic recalculation of Epic's original estimate when task estimates are changed
so Epic has 3 tasks of 5 h each estimation, so the original estimation of epic is 15 h. If we change the task estimation to 10 h and leave the rest unchanged we have 5 +5 + 10 . therefore the Epic estimation is to be changed to 20h
I want this rule to run every two days at 8 a.m.

but how to add schedule for 48 h ??

You have to create a second rule that uses the Scheduled trigger .

the problem is that this trigger must be executed for all epics in the project, e.g. every 2 days. So not for a specific epic, but for everyone in turn.

That is within the capabilities of the Scheduled trigger.
In the trigger you specify that you want to run a JQL to select the issues against which you want to operate. Then provide the JQL to select all the Epics.
You will probably also want to uncheck the box below the JQL that says it should select only Epics that have changed since the last time the rule was run.
