From the scrum board page, I have the option to remove an issue from the sprint when I right-click on it.
I am presented with a message telling me that the sprint scope will be affected by this action and text that says: "ISSUE" will be moved from sprint "ACTIVE SPRINT" to "OTHER SPRINT".
The "Other Sprint" is a sprint that's not even in the same project. I never want our issues to go on that sprint. How can I change which sprint the issue will go to?

The sprint values for the issues are usually stored in a field called "Sprint". You can open the issue in a new tab and edit the issue to change the sprint value from the dropdown (screenshot below).
Hi Sramanth, thank you, I appreciate your help! I do know how to change the Sprint value in other ways, but the method of changing the sprint that I was referring to in my question was this one in the screenshot below.
I right-click on an issue and select Remove from Sprint. When I do so, I would like it to go to the next sprint in the project, but instead it says it will move to a sprint in a different project (in this case, it's called Tony's Staging). I don't know why it chooses that specific sprint but I would like to know how to change the sprint an issue will go to when I remove it from the scrum board.

My guess is that you have a multi project sprint. That is the scrum board that you are using is associated with multiple different projects. Is that possible?

Yes, there are issues from two projects on this sprint (the software project and a service desk project) But the suggested sprint when I go to remove an issue from the active sprint is for a third different software project.
