Is there a way you can see Team members schedule, who are working across different projects in one consolidated view. We like to see team members availability (based on current commitments) , for planning of future projects.. Is there any plugin I should to use to get this info available

If you are looking to analyze issue data (assignee, status, priority, due dates) to understand resource allocation, you can build out informative Jira dashboards for your team using JQL filters and gadgets.
Also, check out Atlassian's new platform: Team Central (currently in Beta) as that might help with getting a high-level understanding of project and team goals to make informed decisions.
