We have 3 types of intake for our user base...Production Support tickets, enhancements requests and projects.
What is the best practices for tracking these different types of requests in JIRA?

It's not really clear what your "projects" might be, but I would be looking to Jira Service Management first. It's the right place for tracking Support Requests. It can be a good place to track enhancements, but that depends on your teams and working practices, it's also good to take enhancements directly into a Development (Software) project.
