I would like to create a basic Jira filter based on 1 word (Release) mentionned in the object.
Could you please help me ?
I have tried this : project = EPRIME AND "Objet de la demande" is +"Release"

what do you mean by using the word 'object'? Do you mean a (custom) field?
If so, it depends of the kind of field where you want to search a specific (part of a) value.
I expect it is a text field where "Release" is the value or part of the full value. You can only search text fields with the ~ operator.

If this is too imprecise and you use Adaptavist script Runner, you can try to use "issueFieldExcatMatch" - function.
