Is there a way to set the default 'Priority' field in Jira to be blank upon issue creation (ideally by project and by issue type, but we are interested in a global setting too)? We do not often use this field and having it automatically populate to 'Medium' (or anything but blank) has unintended consequences with integrations and may result in work being prioritized that doesn't need to be.

The priority field cannot be empty. You could create a priority named blank/none/etc and set that as the default. However, this is a system level setting in cloud so it will apply to all projects. Generally speaking this would be a bad idea IMO. The other option would be to leave your default to Medium or low or whatever fits your needs and then for the specific projects where you want to have none/blank then use automation to update the priority for every issue created. However, given the recent news on automation limits this might be a very bad idea.
The short answer is no, you cannot leave the Priority field blank, it has to have a value. What you could do is remove it from the layout/screen so it is not visible.
I find that removing it from view leads to confusion due to the aforementioned integration implications. For example, when an issue is created in a project it often posts to the associated slack channel, which reveals the "Priority" field. When someone clicks on that and can't see that field, they are confused and/or frustrated. I think we'll leave it to revealed so it can be easily changed by the reporter. Thank you tho!!
You can control that by not using the default integration to Slack and instead use automation to post to a Slack channel.
