I've created read only schema permission to a project but I still can edit workflow and fields in the project, do you know why ?

Welcome to the Atlassian community.

The Permissions Scheme only manages the permissions for viewing and updating issues within the project. It does not affect the permissions needed to modify Workflows or other configuration elements for the project.

Users assigned the Jira Administrator role will always be able to modify the Workflows, Fields, and other configuration elements of a project.

Hi @Chin-Shyong Wong 

JIRA Admin will be able to update configuration as it's higher privileges than porject admin. If it's project admin that are updating the config that means you let some Administer project permission to some user with the extended permission checkbox checked.
