I really want to take advantage of some of the newer features like roadmaps and simplified field set-up, but I have a ton of projects created in the legacy environment. Is it possible to convert a legacy project to a next gen project?

No option to change Priority on Jira Software Issues

I'm not able to change Priority for Jira Software Issues, just auto-assigned with medium priority by default

I'm able to do this for Jira Business Projects not for Jira Software Projects

No, you have to create a new project and then move the issues into it.
