We have need to create an email address that internal users can send a request for assistance. This is turn would automatically create a Jira work management project issue. Is this possible?
I know something like this is possible with Jira Service Management projects, but we don't need that level of complexity for this use case.

You can create a new issue type scheme with the required default issue type and assign this issue type scheme to this project.
That is right. When you create an issue the default value is taken for the project.
