I would like to track how many days a story stays in the 'in progress' column before being moved to done. Is there any way to see this data in team managed projects? And is there a way to see it on the card when looking at the board? (so not having to enter the story).

As a Jira admin you can configure which fields are being displayed by editing the value of jira.table.cols.subtasks, see https://confluence.atlassian.com/adminjiraserver/configuring-sub-tasks-938847874.html
In General Admin, go to Advanced settings, and have a look for the set of fields listed for jira.table.cols.subtasks - you should be able to add duedate to it.

Hello, I am facing the same issue. I have added duedate to the list but sub-tasks due dates are not yet visible.
