Hi I am creating multiple projects in Jira for various teams. Certain fields are made mandatory by me, I need this only for one project and other projects should not follow this. Also, if there are 2 different projects fields of both these projects can vary based of required and optional fields.

In Jira, you can define the field behavior through field configuration. And this can be applied to specific projects.
Check out these steps and resources:
1. Create a New Field Configuration Scheme: go to "Fields" > "Field configuration schemes"
2. Configure the Field: within the Field Configuration Scheme, you'll see a list of fields that you can configure to make field mandatory (required)
2.1: We'll configure the fields under this scheme
2.2: Search for the desired field and make it Required
3. Associate the Field Configuration Scheme with the Project that you want to apply this rule: you can do this step from the Project Settings as well
