Hello, I have administrator role and I have a PREMIUM license. I have several projects and I want some users to see some projects and other users to see other projects. How do I manage those permissions? Thanks a lot :)

In each project you have a permission scheme (there is one by default). You can create a new permission scheme and associate it with a project (Use a different scheme).
Permission scheme can be created/edited in the Jira setting->Issues->Permissions scheme
You can check you permission scheme of one project directly in the project's settings

First create a Project roles in globally like users, viewers, tec.. in System --> Project Roles
Then create a separate permission schemes it they are using shared permission scheme for each project in Issues -- > Permissions Schemes
Then Define the Project role Permissions for each event and assign this permission scheme to the project
Add the users in the people section of each project based on the roles.
