If you are referring to Company Managed projects, you can set/configure statuses for projects by going to Settings Icon at the top right  --> Issues.  Under "Issue Attributes" you'll see a section for "Statuses".

In order to associate a status to a project you need to attribute to the workflow that is associated with that project.

Hello!

For anyone that steps on this thread in the future, the way to add statuses to a project depends on the type of project you are using:

For Company-managed projects, statuses can be shared between multiple projects/workflows, so these would be the steps to add/create new statuses:

  1. Navigate to the project > Project settings > Workflows > Click to edit the workflow you would like to add the status
  2. Click to create/add status
    P.S: Note there are some limitations when editing active workflows. If you need to add specific incoming transitions, you must create a workflow copy instead. Check the documentation below for more details:
    Active and inactive workflows 

For Team-managed projects, statuses can not be shared between multiple projects, so they are restricted to the project where you create them. These would be the steps to add new statuses:

  1. Navigate to the project > Project settings > Issue types
  2. Select the issue type you want to create the status
  3. At the top-right corner, click to Edit workflow > Add the status you want
