we want to use mail handler option.
Can we use it for jira studio. also can we configure it as to send from our email address to jira email address, how this works.
If we use it for studio, how issues will get created for different projects with same email address.

The standard handlers have a simple rule - if the summary has a Jira issue in it, then it's a comment on that issue. Otherwise, it will be created in the default project configured in the handler.
If you want something more complex or clever, you'll have to find or write it a handler to do it.
Although, the short answer is inevitably "look for the JEMH", as it can do that, and a lot more.
