In the above example, the title does not show the word bold in bold. But works in the sub heading

Regarding your question about the title: the whole header is bold and that maybe why emphasizing a word in a header with **bold** may not be very noticeable. It is still bolder, but not as visibly when compared to the rest of the title.
And regarding the UNC link, unfortunately we don't have special formatting for it. It displayed as text.

I tried the same formatting, but the end result shows **BOLD** with the asterisk, and not the actual word in bold. Hope it makes sense
No matter what, the * shows in the checklist as a separate character
