I see there are many dates and times displayed in the interface. As my team is distributed across multiple time zones, how can we make the best use of Jira? For example, what does each date represent - is it in the poster's time zone or the viewer's time zone? Is there any documentation explaining this? We need to reach a consensus.

Jira by default is configured to have all users in the same time zone. The easiest way around this is to have your coworker configure his/her profile to reflect their time zone.
