Hello,
i have noticed a strange situation: whenever i create/report an issue (whether it's an epic, story, task/subtask), I am not able to see or edit the Assignee field.
When i click "configure fields", it does not appear in the list so I can add it.
Can anyone explain why is this?

Hi Claudiu - Welcome to the Atlassian Community!
A few places to look - one is the permission scheme for that project to be sure that you have permissions to Assign issues.
The second is to go straight to the screen itself and add it there. So go to Settings > Issues > Screens. Find the screen (Create, Edit and View if there are multiple) and edit the screen(s) to add the field.

Settings is the gear icon on the top right of the navigation bar. You will need to be a Jira Administrator to see that.
