For our weekly Client meetings, is a best practice or template for capturing project actions, risks, issues?.. start project items
In each weekly Client meeting, we walk through these and update our project log accordingly.

I'm not sure how you are adding your project actions and risks in your Jira and what exact information you want to display in your meetings, however, if all the presentation items are based on issues, there are a few reports/gadgets you can use to display its content in a visible way or report.
To display your issues in a list view with only the fields you need, you can create a JQL filter and use the filter results gadget in your dashboard to display it:
Also using a JQL filter, there are many other gadgets you can use to properly display the issue statistics, as the number of issues resolved or created in a specific amount of time:
