Limiting users from viewing or accessing projects to which they are not assigned.

We would like to control users to view and access only projects to which they are assigned.

We have external users (clients) so it's important they can only access the project which they are on and not others.

I am thinking of assigning default permissions scheme to all project (company-managed) and within that scheme I have removed all users ability to browse projects.  Is this the right solution?

Welcome to the community!!

Yes, any logged-in user shouldn't have Browse Project permission. You can simply add a role to Browse Project (maybe you can create a new role Clients). Then each user/group assigned to this role in a project (from project settings -> people tab) will see their own project. Role is the best way to handle this requirement.
