I am a newbie when it comes to Jira automation rules. Therefore my question:
is it possible to create an automation rule which executes a command (seeting a field value) only when an issue changes from status A to status C but not when the transition is from B to C ?

Try this option within the Automation configuration screen.
Using the drop-down lists, you can select both the SOURCE status and DESTINATION status values.
