JUST STARTING WITH JIRA !! How define workstreams, tasks, subtasks?

Hello COmmunity .... My very first day and first project with JIRA.

I want to create a project with 3 workstreams ("WS") ; each WS has several tasks and one task can have multiple subtasks. How can I define that ??

Typical example:

PROJECT= BUILD HOUSE

      WS#1 FOUNDATION

            Task-1 Prepare lot

                     Subtask 1.1: clean the lot

                     Subtask 1.2: put the fence

            Task-2 Remove garbage and debris

                     Subtask 2.1

                     Subtask 2.2

                     Subtask 2.3

        WS#2 CONSTRUCTION OF BUILDING

A very simple approach would be Theme < EPIC< Story or Task <Sub-task

Theme - Building the house

Epic - Foundation

Story/Task - Prepare a Lot

Sub-task - clean the lot
