Hello,
I am tasked with providing the CFO of my company with a tool that allows him to track his tasks and the tasks he gives to other coworkers.
However, being part of HR, he needs the tasks to be hidden to everyone but him, and the user it's assigned to.
Is there a way in Jira to hide tasks from all users, unless they're assigned to the ticket ?
I tried searched in the settings, but haven't been able to find anything. I am also very new to Jira, and IT in general so any advice will be appreciated.

Yes, it can be via Issue Secuirty Level - it will allows you to take control of the issue who can view the issue and you can use groups, users in it. Please find the link below to explore more.
