I am looking for a way to customize which columns, and how many, a project has when it is created. Is there a way to configure the default "Backlog, Selected for Development, To Do and Done" to be something else and add additional columns where needed?
Under "Administration / Workflows / Workflows" change the "Create" linkage to whatever workflow element you want as default.
In the example image, I changed the "Create" link from "To Do" (Jira default) to "Future Tasks" (which is included in our Kanban board). With this change, all newly created tasks will be automatically added to the "Future Tasks" workflow status.

Columns are based on (mapped to) statuses which are a part of the workflow. If you need different columns, i.e. statuses, just modify the workflow.

I was hoping you could elaborate on that a little as I am a bit new when it comes to Jira and "just modify the workflow" doesn't look as easy as making a couple quick clicks.
Looking at the workflows, I have many of them connected to existing projects. This should make configuring a default to be as easy as using one which was already put together manually and duplicating it, however I can't seem to find out how to make it a default for all future projects.
