When I try to create an incoming mail service by adding a POP/IMAP Mail Server, I'm unable to do so with an email account with dashes. For example, test-user wouldn't work, but then testuser would. Is this a known issue?

Tested this with JIRA 5.2.4 and Hotmail. Seems like there is no problem creating issue with Pop/Imap that is using email with dash.
So, you might want to check if there any error thrown in the JIRA logs.
