My team has around 5 Kanban boards and one sprint board mainly because each board is for a different project. However it is one team working on all the boards. I wanted to see whether there was a way I could have one or two boards to simplify things.

First thing, it will certainly help one team if they have one board for all of their work. It will reduce task-switching, improve focus, raise visibility of progress and make planning / coordination / etc. easier. This will also help as the team appears to have process ambiguity by using both Scrum and Kanban methods; picking one approach will improve this situation.
Are these Jira boards in one Jira project or multiple Jira projects?
If in one Jira project, you could create a new board with a filter than includes all of the issues, start using it to confirm it works as expected, and when ready remove the old boards.
If in multiple Jira projects, you could create a new, saved filter than spans the issues in all of the projects, and then create a board which uses that filter, saving the board in one of the projects.
