Eg: Sprint name, Sprint Start Date and End Date, Epic Name, Story points are not visible in QuickSight fields.
Is it because of the fields that are locked in Jira?

That's up to how the QuickSight mapping has been configured.
I see QuickSight mapping is configured correctly. But for some of the fields data is null however data is available in Jira.
Example: Sprints, Epic name are null.

Could you show us the configuration? The names shown in your sheet are not the names I would expect to see in the mapping.
