I am trying to create my own issue collector, and there are certain fields that I want to include that I cannot. For example "Add Watchers" would be one of the fields I want to have on my issue collector. I am not seeing it as an option

Hi @Vara Prasad ,

As watchers cannot be added to create screen, you will not be able to add them to Issue collectors also. 

Workaround:

Create a new custom field and map it to the required ticket type. 
Now you can select the newly created field in issue collector
