When I added my parent issues to new sprint, I want it to change from created to do automatically. I know it is not possible to change statue without assigning to someone. Can Automation assign to me and then change the status and then unassign again?

First thing: it is not a requirement of Jira (or Scrum) to have an assigned person before a change to issue status. (Indeed, that seems opposite of several agile ideas.) That behavior appears to be something your team implemented (with workflow perhaps). Please identify the cause of that before continuing with your automation rule.

Yes, you could create a rule triggered on a change to the sprint field, add any relevant conditions, and then transition the issue.
