I've just signed up for the free trial of the Jira Software product. I'd like to set up an Epic to fill the backlog for a list of projects I'm working on with each project being it's own epic. However, after Clicking on "Create Issue" from the sidebar, I don't see any option to select "Epic" when selecting an issue type. Here are some screenshots from relevant screens showing my problem and configuration:

I would suggest you to go through the Issue Type Schemes to confirm the type of issues that you can create on the specific J Campbell's Projects under Project settings - https://<fqdn>/plugins/servlet/project-config/<project_key>/issuetypes . For example:
Also, do you observe the same behavior when you create a new project and try to create a new ticket from there?
Hey Ahmad! Thank you for your solution. I did, in fact, have to create the issue types under the project specific settings.
Also, just to answer your second question, yes, I did observe the same behavior when creating a new project and creating a new ticket. Not sure if that is still relevant given we now know the solution but wanted to add in case anyone else came across this issue and did NOT see the same behavior.

You are most welcome! Since you mentioned that the same behavior is observed on a brand new project / ticket, let us look at the Template you chose for the project when it got created. For example, it is defaulted to Scrum template here on my end:
When you click Change, you will be presented with the following screen to choose the template that you would like to use:
In this case, can you please confirm the template that was chosen when you created the new project so that we will be able to fully understand the root cause to the behavior that we are seeing earlier?
