Hello,
Does anyone know whether there's a way to only offer users of our Jira instance company managed projects vs offering both company managed and team managed projects?
We are running into some issues where team managed projects are being setup and then needing to be regularly migrated to company managed ones to enable the integrations we have between projects etc.

Yes, you can "turn off" or change who can create team-managed projects by updating the global permission that allows you to create TMPs.

Do note that even when that global permission is not allocated explicitly to any user group, users who are Jira Administrators are still able to create Team Managed projects. And some of the project templates are offered only as Team Managed projects.
You need to also educate your Jira Administrators to ensure they know about this.
