Default field start date in Jira

Hey,

does Jira provide default field start date? I would like to select a start date in issue screen, which is then automatically taken over in the roadmap like due date.
Secound question: If I select in roadmap a start day with my cursor Jira adds automatically 14 days till due date. In issue screen the default field due date is shown but not start date. I think it´s the same issue as mentioed above because start date is not default? And are the 14 days default? Or can I customize it?

"Can I customize it" - Exactly my question... where can I customize the default durations for both Issues and Tasks in my project?? Why is this not easier?
