I'm trying to implement an onboarding process project in JIRA Software for our company. I created a new project with the default Kanban board, made for software. I modified the columns based on my requirements. As multiple people are involved in this process, I'm looking into creating task triggers and appropriate actions for the project in question. First step of the automation would be to create a new task in the project that would actually represent a new client to be added in the process. Instead of a user (company member) going into JIRA and manually creating an issue, I would like our sales guy to send an email to a specific email address, basically letting JIRA know to create a task (new client) in the process (project I created).
I'm looking into doing this without JSD, as I don't think we really need that. Now, I know about email handlers, but I'm not quite 100% sure how they work and what I need to set up, in order for it to work. If that's even what I need.
Any help would be appreciated.

You‘re on the right track. Email handlers are able to solve that problem, check out Atlassian docs how to use them.
If you need more features or flexibility, you could try the JEMH app.
I believe there are also similar apps in the Atlassian Marketplace.
