Are only "Done" and "Closed" items included on control chart?
Or "Cancelled" items are included as well?
If "Cancelled" items are included in control chart, is there a way to exclude them?

Just to confirm, are you using the built-in Control Chart for a company-managed project?
If so...That chart allows several options for including / excluding data.
You may select columns, not statuses. Please check the board settings to learn if your status values are in the columns you want to include.
You may also use Quick Filters with the chart to specifically include / exclude status values, or other criteria based on issue fields.

Instead of the limited Control Chart report of Jira, try also the Control Chart gadget offered by our Great Gadgets plugin.
This gadget is more advanced, highly configurable and let's you choose what to measure.
In addition, it can offer a Data tab with detailed report that you can easily export in CSV.
Please note that this app offers many other gadgets that you will find useful. Just have a look over the articles from our blog to make a better idea about how many things you can tracks with our app. It can be a great asset for your company.
