1) I have created a new workflow. When I create a "bug", how do I associate the bug to the new "workflow"?
2) I have created a new project. Since most of the project will contain issue type = bug, how do I change the 'project type from Software to "Bug tracking (Classic)"? If does say that it is " Great for teams who don't need a board." What if I do want a board? Which project type allows me to manage bugs and create a board? Hi @Benichou Fiona , welcome to the Community. You associate Issuetypes to workflows. Please note that the following does not apply to Next-gen projects where traditional workflows do not apply.
assuming you are on a Classic project and you are an admin:
once complete all bugs, new and preexisting for this project will be associated with the new workflow.
2) just keep the current Software project it will work well for you.

Hi Benichou - Welcome to the Atlassian Community!
1. You need to add the workflow you created to an existing workflow scheme used by the project or create a new scheme.
When you attach your new workflow, it will prompt you for the Issue Types to associate with the new workflow.
2. I would just leave it as a Software type project and build your board as you want. That is the easiest. Otherwise, you cannot "migrate" a project from one type to the other per se.
You have to create a new project of the type you want, then Move all of the exiting issues from the old project to the new project. And then delete the old project.
