Please I need some help resolving an issue on a kanban board. The admin keeps getting automated messages in email notifications about some tasks due in a couple of days even after acknowledging and updating those tasks. How do I resolve this issue?

It depends on what is causing the notification. The source of the notification has to be determined before a fix can be determined.
The notification might be caused by a subscription to a Saved Filter which is emailing results to the user.
The notification might be generated by an Automation for Jira rule that is set up to find such tasks and send email.
A Jira Administrator would be able to navigate to the gear icon (near your avatar) and select the System option, then the Global Automation option to see the Automation for Jira rules for the system. Clicking on the Audit Log tab will show the history of rules that have run or been modified. You can click on the rule name shown there to see the details of the rule.
If you can show us a screen image example of the notification being received, that might provide some clues to us about its source.
