I want to set up 5 separate Kanban boards for 5 individual services in Shared Services, and one “Master Board” where all the tasks from the individual services can be seen.
Is this possible.

If you use a company managed project where your issues are stored, sure. You can create as many kanban boards as you like. Each board has a filter behind it to retrieve the issues displayed on the board.
While an issue exists only once in Jira, it can and will be displayed on every single board that has a filter that returns it. Consider a board basically as a view on your issues that also enables a set of additional features to manage these issues by.
