What does "Use the above project and issue type pair for all other combinations" mean?

I'm bulk moving issues from one project to another, and I see this tickbox. What does it really mean? I've googled it but still not clear:

Which one is the above project? Origin or destination? What are all other combinations? Combinations of what?

It will use whatever is currently chosen under "To". In your case the Project with the green shield icon and the issue type "Task".

You can use the Bulk operation for moving multiple issues with different types from different projects. The Bulk dialogue would normally ask you for a destination project and type for each unique combination of Project and type within in the issues you selected. By ticking the box, it will apply the same combination to all of the issues.
