I have a request from the agents using JSM, they would like to be able to track when they have a customer call scheduled in the agent view. Is it possible to utilize the calendar function with only one field and a time?

You can easily add a "Jira issues Calender" gadget to a dashboard, tracking a filter of issues using 1 date or date/time field.
