I am planning to create custom dropdown menu for our org in Jira service management. Also the goal is to create a sub menu which will appear and show different options based on the selection of the custom previous menus. It is possible? If yes, I will appreciate your guidance.

You can create a custom field of the type "Select List (Cascading)." This allows you to define necessary values and sub-values and add the field to the appropriate screens. This setup enables you to create conditional fields with two lists: a parent list of values and a child list of values that depend on the selection made in the parent list.
Go to Admin settings --> Issues --> Custom field --> Add field --> Select "Select List(Cascading)"
Once the field is created, in the custom fields section search for it and click on "contexts and default value"
Now add the parent values click Add and then click configure to add Child values for the field.
Don't forget to click on "Done" after making all the changes.
Note - You need to be a Jira administrator to create and configure a cascading field.
