I am having people use tickets as purchase orders.
All the tickets have a default priority of Medium.
How do I change this so they can choose from low, medium or high?
Is the Priority field on the Request Form for that Request Type?
You can check/change that as a Project Admin:

Note: If you are using Forms in place of the standard request form, select Forms from the left-hand menu (i.e in Step 2 above), select your Form, and check/edit it here instead.
