I have 2 Jira Cloud projects. the first project is dedicated to our Japanese customers. This project has only one language: Japanese. The second project is for the rest of our customer all over the world. This project has only the English language.
But I have one problem I can't figure out. On the portal, when I look on my requests and filter them by status, I can see the status translated in Japenese for the second project even if I have only one language:
I hope you will be able to help me and explain how to have only the statuses in English.

when you look here Manage your language preferences | Atlassian Support the language comes from the browser , the account settings or the product settings.
i assume that you have setup in your case japanses as your language , therefore the UI is translated. It could be that In Progress is not translated.
The setting in service projects for languages Provide help in multiple languages | Jira Service Management Cloud | Atlassian Support is not owrking on Jira site.
