In my service project settings, under PEOPLE I have a number of Service Desk Customers listed. I'm assuming they are getting added when they "enroll" into our portal. Is there a way to systemically add our CUSTOMERS to a group instead of having a laundry list of users in there?

my suggestion is to group users into organizations. Please read the following article in order to figure out how to do that https://support.atlassian.com/jira-service-management-cloud/docs/group-customers-into-organizations/
You can also group users into group if you want btw there are no chance to do that automatically because a clear rule should be put in place.

Unfortunately, you can't do that automatically. Currenlty there's an open request in order to associate automatically email with an organization. Please vote and watch https://jira.atlassian.com/browse/JSDCLOUD-4519

so our users are creating an account via DUO (our MFA) - there's no way to add them to an org?
