I have 2 projects,
When the internal ticket is created, off the back of a customer ticket being raised, I want to be able to copy over the "organisation" field so internal teams know who/what the work is for.
Is this possible?

I see that you didn't get any answer so I would like to suggest our Copy & Sync app that can be really useful in your case.
You can copy and sync issues between projects (in your case for escalation between a customer-facing project and an internal project), that way, you keep consistency and everyone is up to date.
I suggest you to take a look at our documentation on how to copy and synchronize fields between two issues. Here is an example for the field organizations:
