Is there a way
1) To hide or remove portal URL from an IT Service Management project?
2) To record additional customer information i.e., location / time-zone etc. for an online support, if needed?

Please find below the ways to achieve these:
1. To remove any ITSM project from the Customer Portal, update the permission scheme and remove the Browse Projects permission for 'Service Project Customer - Portal Access'
2. For capturing additional details like time-zone, custom fields can be added to the forms which will capture the requisite details and appropriate action can be taken.
