How to edit and understand Form and fields in forms in Jira.

I would like to edit field that we have  in a form that changes a form when you choose it as a choice after one of the mandatory fields. I want to rename it and understand why  the choice does not show in the fields when ticket is opened and that i can not see it when going to Search - this fields and can not see the options ( choice)
