Based on my knowledge for the canned response setup, the variable that is showing in the dropdown box is what available out of the box. Anything else is not available.
Please note that back in 2023 April timeframe, Atlassian did announced an EAP on using issue's smartvalue syntax within response body - See https://community.atlassian.com/t5/Jira-Service-Management-articles/Early-access-program-canned-responses-in-Jira-Service-Management/ba-p/2327118
I have not try it out back then or participated in the EAP due to workload. You should check with Atlassian Support if this feature is now GA or not. Or check out on JSM Cloud Roadmap page - https://www.atlassian.com/roadmap/cloud?status=& for JSM product.
Another option for you is create automation rule against your JSM project in question to send out custom email to users where you can use issue smartvalue syntax in the email content. Here are the links for your reference:
